Ingredients for 2 people
2 balls of mozzarella di Bufala
2 large beef heart type tomatoes
100 grams arugula
2 tablespoons of olive oil with truffle juice
1 half tablespoon of sherry vinegar
Fleur de sel with truffle Truffle chips
Wash the tomatoes and cut them into strips 0.5 centimeters thick.
Arrange them in a rosette on your plates.
Distribute the arugula, washed and drained beforehand, over the tomatoes.
Place a ball of Bufala mozzarella in the center of each plate.
In a ramekin, mix the oil with the truffle juice and the sherry vinegar.
Season with the vinaigrette and a pinch of fleur de sel with truffle.
